I did it! The rough draft is done. Sorry….it’s not ready to be read yet. I have lots of fine-tuning to do, but the months of gathering information from all the class notes and handouts is complete. I still need to gather great stories that are examples of how the concepts have been used to create BreakThru in real life. Now I am taking a break to focus on a couple other projects and get ready to travel! The book proposal is next…Yay!!

Bob and I made our favorite raw dessert and I was reminded to post the recipe on the blog, cuz everyone always asks for it!! This is always a big hit at potlucks, and we are taking it to the Sunburst Sanctuary for tomorrow’s meditation. Hope you enjoy it!
Raw Chocolate Coconut Haystacks
From the kitchen of Elaina Geltner and Bob Nanninga
¼ cup plus 1 T. Coconut oil (also called coconut butter), raw/organic
¼ cup (or less) raw organic honey
1/3 cup raw organic cacao
½ tsp vanilla
1 ½ cups shredded (unsweetened) coconut, organic
Himalayan sea salt to taste
Bring coconut oil to room temperature. Cream together coconut oil, agave, cacao, vanilla. When well blended, add coconut. You might find it easier to mix with your hands!
Chill briefly in freezer, or longer in refrigerator.
